GPS Tracks is able to track your location in the background and save logs for you. You have this Google Map, you can start a new tracking, then close the app and forget about it. It will keep on monitoring your location until you tell it to stop. You can add waypoints as you go, save logs as GPX files (and then email them to a friend), track your elevation on iPhone 3GS and 4.
